Temper the meat.
This is a fancy way of saying take the steak out of the fridge and let it come to room temperature for 20-30 minutes so it isn’t freezing cold when it hits the hot pan – if it comes straight from the fridge, the heat of the pan will drop, and you won’t get as flavourful a brown crust.
Pat it dry
This has to do with the crust: patting your steak dry removes moisture from the outside so that when it hits the pan, the heat can (almost) instantly evaporate any remaining moisture, resulting in a beautiful sear.
